Stu Foulks was a member of the 1980-81 MCCC baseball team. In 1981, Foulks was drafted in the 14th round by the Houston Astros in the MLB June Amateur Draft. The following year, Foulks was drafted in 2nd round of the 1982 MLB June-Secondary Draft out of Jacksonville University.
Foulks played two seasons of Minor League baseball, one with the Little Falls Mets in Short Season A ball and one for the Columbia Mets of the South Atlantic League, a single A affiliation of the Mets.
The 1981 MCCC team that Foulks was a member of went 39-7 and was the first Viking baseball team to qualify for the NJCAA World Series. Mercer finished third at the World Series, which at the time, was not divided into different divisions, but all teams played together.
Foulks had a 2.70 ERA with more than 100 strikeouts in the 1981 season at MCCC.
